College Cooking: Breakfast Nachos

Ingredients:

1/2 can of refried beans

Half bag of tortilla chips

1/2 cup Monterrey jack cheese

1/3 cup salsa

4 eggs

Pat of butter

1 tsp. Tapatio sauce

Pinch of chili powder

Salt (optional)

Pepper (optional)

Directions:

Break each egg into one bowl and beat together. Meanwhile, melt the pat of butter on a medium skillet over medium-high heat.

Pour Tapatio sauce into bowl of beaten eggs and sprinkle the chili powder and seasoning in. Stir.

Pour egg mixture onto hot skillet and scramble eggs, adding cheese slowly.

Put handfuls of tortilla chips onto a plate and spread refried beans on top. Sprinkle the rest of the cheese on the beans. Microwave for 45 seconds.

Once eggs are cooked, dump them on the tortilla chips and add salsa as desired.
